1 lb pork sausage roll
1 lb ground beef
1 lb linguica – ground linguica if you can find it
1 chourico – about ½ - ¾ lb
3 onions – small dice
5 ribs celery – small dice
1.5 loaves stuffing bread
15 oz can chicken broth – low sodium preferably
2 cloves garlic
Poultry seasoning

Directions:

In glass bowl, break up bread into large chunks. Pour can of chicken broth over bread. Add nearly one can of water to bread – enough broth and water so that all bread is wet. Let soak and soften.
Brown onions, celery and garlic in small amount of olive oil in large pan. Set aside on plate. Brown ground beef, and pork sausage. Add linguica and chourico and continue to brown. Add onion mix and stir well. Season with salt and pepper. Drain bread, and add in small batches to meat mix – stir well to incorporate bread. Continue adding bread, and season with poultry seasoning to taste. Careful not to add too much bread.
