Mama's Potato Salad Recipe

2 1/2 pounds potatoes
6 eggs
1 1/2 - 2 cups mayonnaise
1 1/2 tsp sweet pickle relish
onion powder
salt
pepper

Directions:
Directions:
Scrub potatoes clean. Boil potatoes in jackets and boil eggs. Peel and cube boiled potatoes, put them in large mixing bowl. Peel and finely chop boiled eggs, put them in the bowl with the potatoes. Add mayonnaise to bowl and mix together, adjusting amount of mayo until the consistency is to your liking. Add relish, salt, pepper and onion powder to taste. Mix thoroughly and refrigerate.

Again, no accurate measurements for this one. I've never made it taste just like Mama's. If I handed the ingredients to her, and she just mixed them, it turned out better than mine would have. But then again, she had the benefit of the world's best potato salad test-taster (aka Lloyd-Daddy-Davis) living with her.
