1 c. chopped celery
1/2 c. chopped onion
1/3 c. butter
1 tsp. poultry seasoning or ground sage
1/4 tsp. pepper
1/8 tsp. salt
8 c. dry bread cubes (we like sourdough)
1/2 to 3/4 c. good chicken broth
1 10- to 12- lb. turkey

For stuffing, in a large skillet cook celery and onion in butter till tender but not brown; remove from heat. Stir in seasoning. Place dry bread cubes in a large mixing bowl; add onion mixture. Drizzle with enough broth to moisten, tossing lightly.

Rinse turkey on the inside and outside; pat dry. Season body cavity with salt. Spoon the stuffing loosely into neck cavity. Pull the neck skin to the back; fasten with a skewer. Lightly spoon more stuffing into the body cavity. Use no more that 3/4 c. stuffing per pound of turkey. Tuck the ends of the drumsticks under the band of skin across the tail. Twist wing tips under the back.

Place turkey, breast side up, on a rack in a shallow roasting pan. Brush with oil. Season with salt and pepper. Insert a meat thermometer into the center of one of the inside thigh muscles, don't touch a bone. Cover loosely with foil.

Roast turkey in a 325º oven for 3 to 3 1/2 hours or thermometer registers 180º, and juices run clear. After 2 1/2 hours, cut band of skin or string between drumsticks so that thighs cook evenly. When done, drumsticks should move easily. Uncover the last 30 minutes of roasting. Remove from oven and cover and let stand 15 to 20 minutes before carving.

This is a simple turkey recipe. You can play with it but the basics are here. We have tried different stuffings over the years but I keep coming back to the simple tried and true.

It is fun to present the turkey because it has to sit before carving. You can lay it on a platter with fresh sage leaves and orange slices or cumquats, then carve at the table.

A tip for a turkey dinner; make your mash potatoes early and put on low in the crockpot.
