Crust:
2 cups of graham cracker crumbs
1 stick of margarine, melted
1/4 cup sugar (optional)
Cream cheese layer:
16 oz cream cheese, softened
2 cups sugar or granulated Splenda (or 5 TBSP Equal)
1 envelope Dream Whip
1 cup milk (2% will work)
Fruit layer:
2 cans of cherry pie filling
Topping:
8 oz. Cool Whip

Directions:
Crust: Mix together all ingredients and press in bottom of a 9X13 pan. Bake at 350º for 10-15. Cool completely.
Cream cheese layer:Prepare Dream Whip according to directions on package and keep it in the fridge while you ... Cream together cream cheese and sweetener. Mix in prepared Dream Whip. Spread on completely cooled crust.
Fruit layer: Spread pie filling over cream cheese layer. (cherry, strawberry, blueberry and half and half have worked well, too).
Topping: Spread Cool Whip over fruit layer.
Cool for at least 1 hour.

A friend and I came up with this as version of the Cherry Yum Yum dessert served at Western Sizzlin' in the 1980's. When daddy was diagnosed as diabetic, this is one of the desserts I was able to adjust for him.
