1 1/2 Teaspoons green peppercorns, crushed
1 Teaspoon Lemon juice
1 Teaspoon Poultry seasoning
1/2 Teaspoon garlic powder
2 Teaspoons red & black pepper mix, crushed
1/2 Teaspoon nutmeg, ground
4 1/2 pounds crown roast of pork - approx 12 ribs, trimmed
Curly endive, Optional
Red grapes clusters, optional

Directions:
Directions:
Make slits in roast, insert small garlic pieces.

Combine first 6 ingred.- rub mixture over inside of roast. Place,
bone ends up, on a rack in a roasting pan. Cut a piece of foil long enough to fit around ribs. Fold lengthwise into thirds. Wrap foil
around ribs and fold over tips of ribs.

Insert meat thermometer into roast without touching bone or fat.
Place roast in 450 degree oven: reduce heat to 325 degrees. Bake for 2 to 2 1/2 hours until meat thermometer reaches 160 degrees.
Do not overbake or meat will be dry!
Remove from oven; let stand 15 minutes. Transfer to large serving platter. Garnish with curly endive and red grape clusters in middle.
