1 1/4 cups flour
1 cup sugar
1 1/2 tsp. baking powder
3/4 cup milk
1/3 cup shortening
1 egg
1 tsp. vanilla
1/2 tsp. salt

Directions:
Heat oven to 350º Grease and flour pan,8 by 8 by 2.
Beat all ingredients in large bowl,pour into pan. Bake for 35 to 40 minutes. If you want a larger cake, double ingredients.

Great cake for upside down pineapple or peach. Instead of greasing pan, place a 1/4 cup of melted butter in pan, place pineapple in bottom of cake pan with sprinkle with 1/2 cup of brown sugar, place cherries in middle of pineapples. Can use peaches instead of pineapples.
