4 medium zucchini
2 T. water
1-3/4 cups water
6 oz. chicken flavored stuffing mix
1/4 cup margarine

Directions:
In 12x7 baking dish, combine whole zucchini and 2 tablespoons water. Prick zucchini. Cover with waxed paper and microwave on HIGH 10-12 minutes. Cool slightly and cut zucchini in half lengthwise. Scoop out centers, reserving pulp. Arrange zucchini shells in baking dish. In bowl, combine 1-3/4 cups water, seasoning mix from stuffing, and margarine. Microwave 3-4 minutes. Stir in bread crumbs and mix until moistened. Stir in reserved zucchini pulp. Spoon into cooked zucchini shells. Cover with waxed paper. Microwave on HIGH 4-6 minutes.
