16 pounds tomatoes, peeled and diced
2 cans -12 oz. tomato paste
2 T. leaf oregano
2 T. dried parsley or 1/2 cup fresh parsley, chopped
4 medium onions
4 cloves garlic
1/2 cup vegetable oil
2 bay leaves
2 T. salt
1/2 cup sugar
2 tsp. basil
3/4 tsp. cracked pepper

Directions:
Directions:
Sauté onions and garlic in vegetable oil. Add rest of ingredients in large stock pot. Simmer 2 hours. Remove bay leaves. Ladle into clean quart jars and process in hot water bath for 45 minutes or freeze.
