2 cooked breasts - pulled in small pieces
2 cooked thighs- pulled in small pieces
2 garlic buds, chopped
5 ribs celery, sliced thin on bias
1bunch scallions, sliced on bias, separate white and greens
1 c. mushrooms sliced
1 c. pea pods
1 pkg. bean sprouts
1/2 head of baby bok choy sliced thin
3 t. Chinese seasoning mix
2 T. Chinese oyster sauce
3. chicken stock
2 T. oil
1/2 medium onion. sliced thin

Directions:
In a large stock pot,heat the oil. Add chopped or microplane garlic buds. Add celery and 1/2 onion. Saute until al dante. Add mushrooms and scallion whites.Add bok choy and chicken pieces. Add chicken stock. Bring to a boil. Mix the Chinese seasoning mix in a bit of cold water until dissolved. Add to the boiling broth to thicken. Add the oyster sauce to add depth of flavor and color. Reduce heat and simmer until the sauce reduces and thickens. Just before serving add the bean spouts, pea pods, and scallion greens. Heat and serve over Chinese noodles and rice. Or skip the rice and put the noodles over hamburger bun and put the sauce on top for a chow main sandwich.

Cutting the vegetables takes the most time. Cornstarch with some dries beef stock can be used instead of Chinese seasoning mix,. Molassos or caramel color can be used instead of oyster sauce. Chinese noodles can come in a can in the Chinese section in the market.
