1/2 head each of red and green cabbage, shredded
4 large carrots, shredded
1 med onion chopped fine (optional)
2 tbsp sugar (or 2 packets sugar substitute - but it's better with sugar)
1 1/2 c white vinegar
2/3 c vegetable oil
Salt and pepper to taste

Note: if the cabbage are small then reduce vinegar and oil accordingly, e.g. to 1 c. vinegar and 1/3 c oil.

Place all shredded vegetables in a large bowl.

Bring vinegar to a boil and add the sugar stirring until it's dissolved. Remove from heat and whisk in the oil. Add salt and pepper if desired. If you find it too sour or vinegary tasting simply add more oil and even a splash of water or more sugar.

Pour over shredded vegetables while still hot. Mix and store in fridge until cooled and ready to serve.
