3/4 C ketchup
2 t horseradish
1 t cumin
1/2 t Worcestershire sauce

meatloaf
1/4 C oats
1 egg, beaten
1/4 C milk
2 t salt
1 t each of pepper, cayenne pepper and cumin
1 small onion quartered
1 carrot, peeled and cut into chunks
1/2 rib celery cut into chunks
2 cloves garlic
21/2 lbs. ground chuck
1 t dried parsley
1 t dried thyme

Glaze: In a bowl, whisk ingredients and set aside.

Meatloaf: Preheat to 325 degrees and line a baking sheet with parchment paper.

In a blender, grind oats. Transfer to bowl and add egg, milk, salt, peppers and cumin.

In the blender, process onion, carrot, celery and garlic until finely chopped.

Add vegetables, beef, parsley and thyme to oatmeal mix. Gently toss until combined. Form mix into a rectangle and place on baking sheet.

Bake 10 minutes then spoon on glaze. Return meatloaf to oven and bake 50 minutes. Let rest 15 minutes before serving.

Do not overwork meatloaf. Just mix until combined for a juicy meatloaf.

Can use fresh parsley and thyme. Use 1 T each if fresh.
