1 1/4 c yellow sugar
1/2 c. oil
1 egg
2 tsp vanilla
1 c. butter milk
1 1/2 c. diced rhubarb
1/2 c. chopped walnuts (optional)

2 1/2 c. flour
1 tsp baking soda
1 tsp baking powder
1 1/2 tsp salt

Muffin Topping
1 Tbsp melted butter
1/3 c. sugar
1 tsp cinnamon

Directions:
Directions:
Combine dry ingredients together. Beat yellow sugar, oil eggs, vanilla and butter milk together. Add dry ingredients to egg mixture. Now add rhubarb and nuts.
Fill muffin tins 2/3 full and top with muffin topping. Bake at 400 degrees for 20 -25 min
