1 stick of butter melted
1 lb. potatoes peeled and cubed1/2 in.about 2 cups
8 extra large eggs or 10 eggs
1 15 oz.container of riccota cheese
12oz grated sharp cheddar cheese
1/3cup flour
1/4 cup chopped chives
3/4tea. baking powder
1/2 tea.salt
1/2 tea.pepper

Directions:
Peel potatoes and place in a 3 quart pot,cover with cold water by 2 in.and bring to a boil over medium heat;add salt.Simmer until tender but not crumbly.20-25 minutes.Drain in colander and when cool enough to handle ,cut into 1/2 in. cubes.Heat oven to350 degrees and arrange rack to the center.Heat butter in an oven proof nonstick skillet.( If the handle is not ovenproof ,wrap it tightly in aluminum foil.).over medium heat until hot but not smoking./Add potatoes and cook stirring occasionally until heated through,about 2 minutes.Wisk together flour,chives,baking powder and pepper in a bowl.Whisk together eggs and cheeses in another bowl until well mixed then mix in flour mixture.Pour egg mixture over potatoes and bake until firm and puffy,about 45 minutes.Let cool 5 minutes and run a small knife around edge of frattata and gently slide onto platter.Serve warm.
