2 c. heavy cream
3/4 tsp. salt
pinch of each: sugar, nutmeg, cayenne, black pepper
1 9 inch deep-dish unbaked pie shell or 10 inch unbaked pie shell
soft butter
12 strips, cooked and coarsely crumbled
1/2 c. grated Swiss or Gruyere cheese
1/2 c. grated cheddar cheese

In a medium bowl, beat together the eggs, cream and seasonings.

Sprinkle bacon over bottom of pie shell. Cover with the cheeses and pour egg mixture over all.

Bake at 450º for 10 minutes. Reduce heat to 300º and bake until custard is set, about 30 minutes longer.

This is a great make ahead recipe. Cook and freeze. Bring to room temperature and reheat. It is best when not over cooked, you want your custard firm but still creamy. You can get the crust, bacon and cheese done the night before and then add the egg mixture right before you want to bake the quiche.
