1/3 c. butter
5 onions, thinly sliced
2 T. four
7 c. beef stock or 3 cans 10 oz. beef consommé and 2 cans of water
1/2 tsp. pepper
6 slices toasted French or Sourdough bread
6 thin slices Gruyere cheese
4 T. grated Gruyere cheese

In a heavy saucepan, melt butter. Add onions and sauté over very low heat until tender. Add flour and mix until smooth. Add stock gradually, stirring constantly. Add pepper, comer and cook over low heat 30 minutes. (Cool and freeze at this point of desired.)

To serve, place cheese slices on bread on bottoms of individual soup bowls. Pour hot soup into bowls. Place under broiler 1 minute. Sprinkle with grated cheese and serve. Or you can toast your bread and sliced cheese before you put it into bowls and skip this step, which can be helpful!

This is Levi's favorite soup. He has loved it since he was 9 or so when he had it at Mrs. Peters and then would request it for his birthday dinner. It is an easy, elegant first course. The more flavorful your beef broth, the better the soup will be!
