2 c. sugar
1 c. vegetable oil
1/2 c. orange juice
4 eggs
1 3/4 c. flour
1 c. chopped walnuts
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 tsp. grated orange peel
3 c. finely grated carrots

Measure all ingredients into mixing bowl. Mix with electric mixer until well blended. Pour batter into greased and floured 9x13 glass pan. Bake at 300º for one hour. Test for doneness with a toothpick. Cool completely. Frost with cream cheese frosting. After frosting this cake, chill it well for the best flavor (3 to 4 hours).

The recipe name is for Leslie's mom but at our house it would have been Father's cake. Dad loves carrot cake and, when he was wanting something sweet, he would make this cake! Over the years we have played with the recipe and made a few changes, so it really is Father's Cake. If you want to make this in a layer cake, line the 9 inch rounds with parchment paper.
