1 package (8 ounces) cream cheese, softened
1/4 cup maraschino cherries, chopped and drained, dry on paper towels
1/4 cup powdered sugar, sifted
1/4 teaspoon vanilla or almond extract
1 C. semisweet chocolate chips
2 tbsp. butter flavored Crisco
40 vanilla cookies

Mash softened cream cheese in pie plate with fork. Mix in chopped cherries, sugar, vanilla or almond extract into cream cheese. Mix until well blended; chill 30 minutes. Melt the chocolate chips and Crisco in small pan. Keep warm. Spoon about 2 teaspoons cream cheese mixture onto flat side of vanilla cookie. Top with another cookie. Repeat until all cookies are filled. Dip each sandwich in melted chocolate; drain and place on waxed paper. Can be sprinkled with chopped flaked coconut or chopped almonds before chocolate sets. Serve immediately.

I made these cookies for one of my Christmas parties, and they were a big hit, especially with Jesse. He liked them so much, he asked if I would make them as a Christmas gift for only him. Needless to say, I did!
