1 lb. box pasta ( I used elbow macaroni)
1 Tbsp. canola oil
1 Tbsp. grated fresh ginger
2 cloves garlic, minced
1 onion, finely chopped
1 green chilie, sliced
1 sweet bell pepper (any color)
Salt and pepper to taste
2 cans white tuna, packed in water drained
1-1/2 tsp. curry powder
1/8 tsp. red chili flakes
3 Tbsp. soy sauce
1 cup frozen green peas
Scallions greens for garnish, optional

Directions:
Directions:
Boil pasta to al dente texture in salted water. Drain and set aside. Chop all vegetables and have ready. In a large pan heat 1 Tbsp. canola oil and sauté ginger and garlic for 30-45 seconds.
Add all the chopped vegetables (except the peas). Sauté for 3 to 5 minutes with a little salt and pepper. Add the drained tuna, curry powder and red chili flakes. Sauté for another minute.
Add the soy sauce and mix well. Then add the cooked macaroni and frozen peas. Mix all ingredients well. Serve warm or room temperature.
