4 oz. dry white wine, 1 shake salt/pepper, 1/2 clove garlic, dash of nutmeg
1/2 tsp. lemon juice
4 oz. grated Gruyere cheese
4 oz. grated Emmenthaler cheese
2 T. flour
dash of kirshwasser or brandy

New World;
4 oz. beer, 1 shake salt/pepper, 1/2 clove garlic, 1/2 tsp. mustard
6 oz. grated sharp cheddar cheese
2 oz. grated swiss cheese
2 T. flour
dash of Worcestershire sause

Mix liquids, spices, and herbs; bring to to a boil. Reduce the heat. Mix the cheeses together and toss with flour. Slowly add the cheese to the liquid and whisk until a honey like consistency.
