3 tsp. olive oil
1 small sweet onion, chopped
1 bunch asparagus, chopped
1 bag (6 oz) spinach
8 oz. orzo (1 1/4c.)
1 can cannellini beans, rinsed and drained
1 can kidney beans, rinsed and drained
1 lb. peeled, deveined & rinsed raw shrimp
2 oz feta cheese
1/4 cup fresh dill, chopped
1 pt. grape tomatoes, cut in half

Directions:

1) Preheat oven to 450°F.
2) Line 15" by 10" jelly-roll pan with foil. Add onion and asparagus to pan and coat with olive oil. Roast for 10 minutes.
3) Meanwhile, place spinach in a large bowl, set aside. Then heat a 4-quart saucepan of water to boiling on high. Cook orzo as label directs; drain and add to large bowl of spinach. Toss to wilt the spinach.
4) In medium bowl, toss together the beans and shrimp. Sprinkle with salt and pepper. Add to roasted asparagus mixture; stir to combine. Spread in single layer and roast 5 minutes longer or until shrimp are opaque throughout. When done toss mixture in large bowl.
5) Stir in tomatoes, feta and dill to large bowl.
