1 c. sugar
6 tbsp cornstarch
1/4 tsp. salt
1/2 c. lemon juice
4 eggs, separated
2 c. boiling water
2 tsp. lemon zest
2 tbsp. butter
1 baked pie shell
6 tbsp sugar for meringue

Directions:
Directions:
Combine cornstarch sugar and salt. Add lemon juice and 4 well beaten egg yolks then add the boiling water. Microwave for 3 minutes, stir for 1 minute then microwave for 1 minute. Add the lemon zest and butter. Cool. Fill the precooked pie shell. Beat the egg whites until frothy gradually add sugar 1 tbsp at a time beat until stiff peaks form. cover lemon filling with meringue, making sure the meringue touches the edges of the pastry. Bake in 350º oven for 5 minutes,or until nicely colored.

when I bake my pie shell I poke holes in with a fork . put a piece of parchment paper in the shell and I put rice in to keep it from puffing up. Take the rice out after about 10 minutes then bake until brown
