4 eggs
2 1/2 c. milk
1 1/2 ts. parsley
2 ts. dry mustard
1 ts. salt
1/4 ts. pepper
Green food coloring, opt.
12 slices of French bread, cut 1/2-inch thick
1 (6 oz.) pkg. Monterey Jack cheese
6 slices ham, chopped
1/2 c. grated Parmesan cheese
3 to 4 Tb. green pepper
3 to 4 Tb. minced onion

Beat eggs with milk, parsley, dry mustard, salt and pepper (can add a drop of two of green food coloring). Arrange 1/2 of bread in 9 x 13-inch pan; cover with Jack cheese. Sprinkle all but 2 to 3 ts. Parmesan cheese on top of cheese slices. Saute green pepper and onion in a little margarine; add chopped ham. Spread over cheeses, then put remaining bread on top. Sprinkle with the saved Parmesan cheese. Pour egg mixture over bread. Bake uncovered 45 minutes @ 350. (The bread crusts can be on or off.)
