Spinach Pie

Ingredients:

Several bunches of cooked spinach; or, 2 boxes of frozen, chopped spinach
2 Eggs
1 Pint ricotta cheese
1 Large onion
4-6 cloves fresh garlic or the equivalent of diced garlic
1 Cup grated Parmesan or Romano cheese {Note: Parmesan has a milder taste}
salt, pepper, olive oil
2 9” Unbaked and unsweetened pie shells (Or fillo crusts)

Thaw spinach; (follow directions on box if frozen brand is used; drain water, place in pan

Sauté onion; add garlic; add spinach into pan and mix well; remove from heat

Add 2 beaten eggs and the ricotta and other cheese; season with salt and pepper if desired; mix well.

Place into lightly greased pan the unbaked, unsweetened piecrusts; add the mix into the 2 piecrusts; top w/ cheese of your choice

Bake for 40 minutes @ 350 degrees F.; Let stand 10 minutes before serving
