¾ C Margarine, softened
1-½ C Sugar
4 Bananas, mashed
2 Eggs, lightly beaten
1 tsp. Vanilla
2 C Flour
1 tsp. Baking Soda
¾ tsp. Salt
½ C Buttermilk
¾ C Pecans, chopped

Optional: Brown Sugar, Raisins, Nutmeg, Cinnamon

Preheat Oven to 325º

In large bowl, cream margarine and sugar. Add bananas, eggs and vanilla to mixture. Sift flour, soda and salt together (add nutmeg and/or cinnamon if desired). Add the flour mixture alternately with the buttermilk to the banana mixture, beating well after each addition. Stir in pecans and raisins (if desired). Pour in loaf pans that have been sprayed with PAM. After pouring into pans, sprinkle brown sugar on top of mixture if desired (approx. ¾ cup).

Bake at 325º for 1-¼ hours or until tests done.
