4 Cups Apples, diced
2 Cups Sugar
2 tsp. sugar
1 Cup Butter
3 Cups Flour
2 tsp. baking soda
2 tsp. cinnamon
2 eggs
1 tsp. Vanilla

Directions:
Directions:
Mix apples, 2 cups of sugar in large bowl leave at room temperature for 2 hours, stir occasionally.
Heat oven to 325 degrees grease 2 8 1/2 x 4 1/2 loaf pan or 4 small loaf pans.
melt butter, let cool
Mix flour, baking soda and cinnamon together; stir into apple mixture; add butter, eggs and vanilla; pur in pan sprinkle with sugar.
Bake 1 1/4 to 1 1/2 hour; test with toothpick comes out dry is done; cool in pan on wire rack about 10 minutes before removing from pan.
