9 large eggs
1 pint small curd cottage cheese
8 oz. grated, swiss cheese
6 oz. crumbled feta cheese
1 bag of spinach (I microwaved it with a sprinkle of water to make it limp)
1 tube of breakfast sausage, cooked and crumbled

Preheat oven to 350º

Spray 9 X 13 inch pan with nonstick cooking spray.

In large mixing bowl, beat eggs. Add cheeses, stir to combine. Stir in spinach and sausage. Pour into prepared casserole dish.

Bake 45 minutes to 1 hour or until eggs are cooked through. Cool slightly before cutting.

I made this the night before when eight of us (Fred, Kevin and I, Jon and Chris Yingst, Susan Richter, Melinda and Ed Iley-Dohn) got together for the Denton Jazz Festival in April 2013 (the weekend of Fred's birthday!). The first one up was tasked with preheating the oven and putting it in.
Remove from fridge 30 minutes before putting in the oven.
