2 med over-ripe bananas, mashed
1/2 cup mayo
1 egg
1-1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup sugar
1/3 cup flaked coconut
1/3 cup chopped pecans

Directions:

Preheat the oven to 350 degrees. In a large bowl, mash the bananas and mix in the mayo and egg with a whisk. Add the dry ingredients to the wet mixture and stir JUST until blended; the mixture will be thick. Add the coconut and pecans, gently incorporate, just a few stirs. Spray a loaf pan with Pam and add the mixture. Bake for 55 minutes OR until a knife inserted in center comes out clean. Remove from the pan and let cool completely. Store in the refrigerator. Recipe makes one loaf.
