8 sub or hoagie buns (8 inch)
1 lb. ground beef
1 small onion, diced
1 small green bell pepper, diced
1 cup spaghetti sauce
1 Tbsp. garlic powder
1 Tbsp. Italian seasoning
1 cup ricotta cheese
1/4 Parmesan cheese, grated
1 cup (4 oz.) cheddar cheese, shredded and divided
1 cup (4 oz.) mozzarella cheese, shredded and divided

Preheat oven to 350º F. Make a 2" wide V-shaped cut in the center of each bun to within 1" of the bottom. Remove the cut portion and save for another time. In a large skillet, cook the beef, onion and peppers over medium heat until meat is no linger pink and veggies are tender; drain. Add the spaghetti sauce, garlic powder and Italian seasoning. Cook 4-5 minutes or until heated through. Meanwhile, combine the ricotta, parmesan and 1/2 the cheddar and mozzarella cheeses. Spoon the meat sauce into buns, top with cheese mixture. Place on a baking sheet. Cover loosely with foil and bake for 20-25 minutes. Uncover, sprinkle with remaining cheddar and mozzarella. Return to the oven for 2-3 minutes or until the cheese melts. Serve warm.
