2 C. All Purpose Flour
1/2 tsp. Salt
2 tsp. Baking Soda
2 tsp. Cinnamon, set aside
3 Eggs, well beaten
3/4 C. Vegetable Oil
3/4 C. Buttermilk
2 C. Sugar
2 tsp. Vanilla
8 oz. Can of Pineapple, drained
2 C. Grated Carrots
3-1/2 oz. Coconut
1 Cup Walnuts, chopped

Directions:
Directions:
Preheat oven to 350°.
Mix all ingredients together. Pour into 3 round or square cake pans or a 9”x13” pan.
Bake 25 to 30 minutes.
When cooled, frost with Cream Cheese Frosting.
