4 chicken breast
6 Tablespoons of olive oil
1 lemon, sliced thin
1 lemon juiced
4 cloves of minced garlic
1 teaspoon of salt
1/2 teaspoon of freshly ground black pepper
3/4 pounds of trimmed green beans, or halved Brussels sprouts
8 small red potatoes, quartered

Preheat oven to 400
Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet. In a large bowl, combine the remaining oil, lemon juice, garlic, salt and pepper, add the chicken and green beans and potatoes and toss to coat. Layer the lemon slices in the skillet. Pour the mix into the pan and spread evenly. Roast for 40 to 50 minutes, or until chicken is cooked through. Serve warm.

I prefer the Brussels sprouts on this recipe. They are fantastic in the lemon, garlic and oil sauce. If you want your chicken to brown, place the pan under the broiler for a few minutes...be careful not to burn.
