1/3 cup shortening
1 cup sugar
2 eggs
1 cup shredded zucchini
1/3 cup water
1 and 1/2 cups plus 2 T all purpose flour
1 t. baking soda
1/4 t. baking powder
1/2 t. salt
1/2 t. cinnamon
1/2 t. ground cloves
1/3 cup chopped pecans

Directions:

Cream shortening on medium speed of electric mixer; gradually add sugar, beating well. Add eggs, zucchini and water; mix thoroughly.
Combine flour, soda, baking powder, salt and spices and add to creamed mixture, stirring well. Stir in pecans.
Spoon batter into an 8X4X3 loaf pan (greased only on the bottom). Bake at 350º for 50 minutes or until center tests done. Cool in pan for 30 minutes, then remove from pan to wire rack to cool completely.

This recipe was given to me by a good friend, Lynn. They have a garden and/or buy zucchini at a local produce stand, shred it and freeze it in one-cup portions. She makes multiple loaves, (especially at holiday time) which can be tightly wrapped in freezer paper, frozen, and pulled out when needed. Makes a nice gift for co-workers and friends (yippee!). Nothing is better over the holidays than to sit down with a nice cup of coffee and a warm slice of Spiced Zucchini Bread. Yum!
