1 egg
425ml (3/4 pint milk)
225g (8 oz ) all purpose flour
1/2tsp. bicarbonate of soda
1/2 tsp. cream of tartar
25g ( 1oz) sugar
1/2 tsp. salt

Directions:
Directions:
Beat the egg and milk in a bowl
Sieve the flour, bicarbonate of soda, cream of tartar and salt in another bowl and make a well in the centre.
Beat the egg and milk mix in gradually,
Add sugar and beat well

Heat a griddle or heavy frying pan (cast iron).
Oil it well (kitchen paper soaked in oil , or baking spray?)
Drop tablespoonsful of the batter, well spaced, onto the pan/ griddle
Allow them to cook on one side until bubbles show up and then flip them to cook the other side.
As they are cooked put them inside a folded tea towel to keep them warm, while you cook more.
Eat warm with lots of butter and jam

Mum used to cook these when we came in starving from school, most likely ruined our appetite for supper as they are so 'more'ish'.
I loved them barely cooked so that some of the inside was still runny... :-)
