Sweet and spicy dipping sauce

Modified and doubled from 4 servings to 8

1 cup rice vinegar

1/2 cup brown sugar

1/3 cup cornstarch sifted into mix

1 cup white sugar

1/2 cup of diced onions

1 teaspoon dried red pepper flakes or to taste

Bring the vinegar to a boil in a small, non-reactive pot, and mix in sugars until dissolved. Reduce heat to low, simmer 5 minutes, and remove from heat. add onions Stir in the red pepper flakes. Add cornstarch a little at a time from sifter. Cool to room temperature before using, or store up to 2 days in the refrigerator.
