One large Idaho potato per person with one extra for each 5 people. (12 for 10 people)
4 boiled eggs (1/3 people +1 to decorate top)
1 cup chopped celery
1 cup chopped onion
1/2 cup green pepper
2 Tablespoon Mustard
4 cups Mayonnaise or Miracle whip
Paprika about 1/4 teaspoon + to decorate
Salt and pepper to taste

Boil potatoes until they are tender Drain and cool. . Remove skin and cut into about 1-2 " pieces placing in a large bowl. Add celery, onion, green pepper, paprika and 2 chopped eggs. Add salt and pepper. Add the salad dressing and yellow mustard. Stir well. Place the sliced egg on top of potatoes and sprinkle with paprika to decorate. Let the potato salad chill in the refrigerator for 2 1/2 hours or overnight
