9 medium potatoes,1 tsp salt, 1 cup flour,2/3 cup bread crumbs, 3 eggs, well beaten

Boil potatoes, peel when cooled and rice them. Combine with all the other ingredients. Refrigerate for several hours - batter holds together better.(Test batter by forming a bit into a ball and dropping into salted water. If batter falls apart, add some bread crumbs and test again). Put in boiling awater and. When balls rise to top, simmer for 3 min.

This is a favorite from my childhood. I especially liked the leftovers which were sliced and fried in butter.
