1 cup butter(no substitutes) softened
2 tsp. baking powder
1 tsp. salt
2 cups sugar
12 oz. seedless raspberry jam
2 eggs
1 cup flaked coconut
1 tsp. vanilla
½ cup chopped pecans
½ tsp. lemon extract
3-3/4 cups flour

In mixing bowl, cream butter and sugar. Add the eggs and extracts; mix well. Combine flour, baking powder, and salt; add to creamed mixture and nix well. Cover and chill for at least 2 hours. Divide dough in half. On a lightly floured surface, roll each falf into a 12x9 in rectangle. Combine jam, coconut and pecans; spread over rectangles. Carefully rollup, starting with the long end, into a tight jelly roll. Wrap in plastic wrap. Refrigerate overnight or freeze for 2-3 hours. Cut into ¼ in. slices, place on greased baking sheets. Bake @375 for 10-12 min. or until lightly browned.
