3 fresh or frozen chicken breasts
1/2 (20 oz.) can crushed pineapple, drained
1 (15 oz.) cans black beans, rinsed and drained
1 C. medium salsa
5-6 burrito size flour tortillas
1 (10 oz.) can green enchilada sauce
1 C. shredded cheddar/Monterrey jack cheese blend
1 C. cooked rice

Directions:
Directions:
Place chicken, pineapple, beans, and salsa in a gallon-size freezer bag. Freeze. Thaw in fridge 24 hours. Empty into crock pot and cook on low 6-8 hours. Remove chicken and shred. Mix the chicken back into the crock pot. Mix in cooked rice. Fill tortillas and wrap burrito-style. Place in 9x13 pan. Pour enchilada sauce over burritos. Top with cheese and broil on middle rack until cheese is melted (about 5 minutes).
