2 quarts water
2 tea salt
1/2 lb.elbow macaroni
2 tab.butter
2 medium onions chopped
1 lb. ground chuck
3 8 oz.cans tomato sauce
1 tea. salt
2-3 cloves garlic minced
2 tea. cinnamon
3 tab.butter
3 tab flour
2 1/4 cups milk
3 eggs
Dash each salt, pepper and nutmeg
1 cup crumbled feta cheese (optional )

Directions:
Heat oven to 350 degrees.Cook macaroni in salted water aldente.Saute onion in 2 tab butter until it begins to brown.Add meat that has been mixed with feta cheese if desired and cook until no longer red. Add tomato sauce,1 tea.salt,garlic and 1 tea.cinnamon and simmer 20 minutes.Grease a 13x9x2 in.baking dish.Spread half the macaroni over the bottom.Top it with meat mixture evenly.Top with remaining macaroni.In a med saucepan melt 3 tab.butter.Stir in flour then remove from heat and slowly add milk and whisk until smooth,simmer about 5 minutes until thickened.Remove from heat and cool slightly.In a medium bowl whisk eggs and slowly add half the hot cream sauce beating constantly.Return mixture to remaining sauce in pan and beat until smooth.Season to taste with salt pepper and nutmeg.Sprinkle macaroni with remaining cinnamon and pour sauce over. Tap pan on counter so sauce goes to the bottom.Bake 40 minutes or until custard is firm.
