4 lbs. Oxtail, cut in 2 inch pieces
1/2 cup Flour
1/2 cup Cooking oil
2 tbsp. Butter
2 cans Beef consommé 10 1/2 oz each
2 cups Water
1 cup Red wine
1/2 tsp. Black pepper
1/2 tsp. Thyme
1/2 tsp. Mrs Dash, extra spicy
2 Garlic cloves, chopped
1 cup Onions, chopped
2 Scallion, chopped
1 Large tomato, chopped

Directions:
Heat oil in a large pot. Flour oxtails seasoned with pepper. Brown oxtails and transfer to a platter. Remove all oil from the pot and discard. Return oxtails to the pot with consommé and water. Add thyme and Mrs Dash and bay leaf. Bring to a boil and then reduce quickly to a simmer. Simmer for an hour. Saute garlic, onion and tomato briefly in butter. Add to simmering oxtails. Add red wine and tomato paste. Add salt if necessary. Simmer for about 2 more hours. Try to skim as much fat off the top as possible
