1 3/4 cup white sugar
1/2 cup margarine or butter
1/2 cup milk
1/2 teaspoon salt
3 - 4 tablespoons cocoa
2 scant cups quick cook oatmeal
3/4 to 1 cup shredded coconut
1 teaspoon vanilla

Put sugar, margarine, milk, and salt in a heavy pot and bring to a boil. Boil for 7 minutes. Stir to prevent sticking. Remove from heat.
Sift the cocoa powder into the hot mixture and stir very well. The mixture should begin to form some granules like when you are making fudge.
Stir in oatmeal and then coconut. Finally stir in the vanilla. Stir very very well while it is cooling. Stir lots and then some more. This is important for the texture of the cookies
Let the mixture cool slightly and drop by the spoonful onto wax paper.
Let cool completely before putting in a tin.

Chocolate Drops.
In a heavy saucepan, melt 1/2 cup of butter over low heat
Add 1 3/4 cup white sugar, 1/2 cup milk no more, 1/2 tsp. salt
Turn up the heat to med and whisk together as it comes to a good boil - not a real hard boil
Boil 5 and a half minutes no less. Add 2 tsp. vanilla

Pre measure 1 1/2 cups minute oats
2/3 cup coconut
sift a good 4 T. cocoa - maybe a bit more depending how dark in a separate bowl.
Remove from heat and stir in oatmeal and cocoa. Stir briskly for a minute or so.
Add cocoanut and continue to stir occasionally as it cools - maybe 5 min.
As it starts to form sugar crystals - like fudge and starts to set drop by T. on parchment.
I cool on the counter usually overnight or once they are set so that they can be easily lifted off parchment store in an airtight container.
They do vary each time I make them - but I try not to eat because of all the sugar.
