Shredded beef from a 2 1/2 lb. roast
1/4 c. butter
3/4 c. chopped onion
1 c. sliced mushrooms (optional)
3 cloves minced garlic
3/4 tsp. salt
1/2 tsp. pepper
2 10 1/2 oz. cans cream of chicken soup
2 c. beef broth from pot roasting the beef or bouillon
16 oz. sour cream
22 oz. egg noodles
a few sprigs of parsley

Directions:

Cut the shredded beef into one inch lengths. Set aside. In a large skillet or soup pot, melt butter. Add the chopped onion and sliced fresh mushrooms. Saute until onion is glossy and mushrooms are tender. Stir in the minced garlic, the salt and the pepper. Stir in the cream of chicken soup and then gradually add the beef broth. Heat over medium heat until the mixture is bubbly. Stir in the sour cream and heat through. Serve over hot cooked noodles or rice and sprinkle with fresh snipped parsley.

Can use as a freezer meal but I would freeze it without the sour cream and noodles, add those when you are ready to serve it.
