3 pounds Yukon Gold potatoes, peeled and cubed
1 - 8 oz. cream cheese
1/2 cup sour cream
1/2 cup butter, cubed
1/4 cup 2% milk
1 1/2 tsp. onion powder
1 tsp. salt
1 tsp. garlic powder
1/2 tsp. pepper
6 slices precooked bacon slices, chopped
1 cup cheddar cheese, shredded
3 green onions, chopped

Place potatoes in a dutch oven and cover with water. Bring to a boil. Reduce heat. Cover and cook about 15 minutes til tender. Drain. Mash potatoes with cream cheese, butter, and sour cream. Stir in milk and seasonings.

Cook bacon til crisp. Drain. Transfer potatoes to 9 x 13 casseerole that has been greased with butter. Sprinkle with bacon, green onion and cheese. Cover and refrigerate til ready to use. Remove from refrigerator 30 minutes before baking. Bake uncovered at 350º for 40 - 50 minutes or til heated through.
