3 seedless cucumbers (peeled)
1 clove garlic, minced
3 cups chicken broth
3 cups sour cream
3 T white vinegar
2 tsp. salt


Topping:
1/2 cup sliced green onions
3/4 cup toasted almonds, chopped
1/2 cup chopped fresh parsley
2 Roma tomatoes, chopped

Directions:
Directions:
Cut cucumbers in chunks and whirl in a blender or food processor with a little chicken broth. Combine with remaining broth, garlic, sour cream, vinegar and salt. Whirl ONLY enough to combine! Chill. Pour into soup bowls.

Combine the topping ingredients in a small bowl. Garnish each serving of soup with the mixture.
