2 Eggplants
2tbsp, Olive Oil
1 pinch of Salt
1 Green Pepper, chopped
1c. Chopped Onion
1c. Chives
1c. Chopped Squash
1c. Chopped Zucchini
1/4c. Shredded Manchego Cheese

1lb. Ground Beef (Optional)

Directions:
Directions:
Cut eggplants in half and make long cuts along the surface
Set Oven at 350º for 20 minutes
Once done, scrape eggplant contents into skillet- keep eggplant shell intact if possible
Stir fry all of the above ingredients (except cheese) for about 5 minutes
fill in shells
Sprinkle top with shredded manchego cheese

*If including beef, cook as normal then include in stir fry
