1 lb of ground pork
2 tbs of finely chopped fresh sage
1 tbs of finely chopped fresh thyme
2 tbs of canola oil, could probably use others
kosher salt to taste
coarsely ground black pepper to taste
1 tbs minced garlic
1 tsp onion powder
Possible? I liked adding 2 tbs of maple syrup. Next time I will add some heat with a dash of cayenne.

combine all ingredients in a bowl and let infuse for 1-24 hours. I tend to do about 4-6. That is planning ahead for this gal. Now form sausage patties about 1/2 inch thiick of any diameter. I confess to being influenced by Jimmy Dean. Now fry them up in a pan! The same pan you will use to scramble your eggs as it adds flavor and helps from losing too many eggs to the pan. Of course that assumes that you are serving with scrambled eggs...
At med/high heat they should cook through in about 7 minutes, flipping once in the middle. They should be crispy and dark-browned on the outside and past pink in the middle.
