1/4 cup uncooked rice (not instant)
1/2 tsp. salt
1/4 cup sugar
1/4 tsp. cinnamon or nutmeg
2 1/2 cups milk
1/2 cup seedless raisins

Soft Custard:
1 1/2 C. milk
2 eggs
1/3 C. sugar
1/4 tsp. salt

Directions:
Directions:
Cook covered over boiling water until rice is tender and milk is absorbed (1 hour) stirring frequently. Serve warm with cream or a soft custard.

For Custard: scald milk on top of double broiler and remove top of pan from heat. In separate bowl, beat two eggs then blend in sugar and salt. Gradually stir mixture into milk then return to double broiler and cook over simmering water stirring constantly. When custard coats spoon, then remove from heat.
