1 - 1 1/2 cups cooked rice
1/2 cup brown sugar
1 tsp. vanilla
3 cups milk
3 eggs
1/4 tsp. salt

Directions:
Directions:
Stir eggs until well blended. Add milk, rice, sugar, vanilla, and salt. Blend together in casserole dish with cinnamon or nutmeg to taste. Put casserole dish (pudding) in pan of hot water and bake 1 hour in 325º oven. Cooked when knife, inserted in center, comes out clean. 1/2 cup or so of raisins can be added before pudding is baked, if desired.)
