2 Tbsp butter or more
6 – 8 cups of roughly chopped sorrel
½ cup diced carrots
2 medium sized yellow potatoes – diced
1 Vidalia onion or leek – thinly sliced
Large garlic clove – minced
1 ½ cups vegetable stock or water
1 ½ cups half and half
¼ tsp grated nutmeg
Salt and pepper
1 tsp lemon juice

Directions:
Directions:
Melt the butter in a Dutch oven. Sauté the leeks, potatoes and carrots until softened (about 10 -15 minutes.) Add the garlic and continue sauté another 5 minutes.

Add the sorrel and cook thoroughly.

Add the stock, salt, pepper and nutmeg and bring to a low boil. Stir in the half and half and heat.

Puree the soup – leaving a few small bits of vegetable. Season with lemon and additional salt and pepper if needed.
