5 to 6 medium red or russet potatoes
5 or 6 green onions
2 stalks of celery
3/4 of a large cucumber
2 to 3 radishes
Helman's Mayonnaise
Spice Islands Garlic Salt
Fresh Ground Pepper
Dill
Thyme

Directions:
Boil the potatoes until fork tender but still firm. Drain them and put in the refrigerator for at least 2 hours, more if you have the time. Cube the potatoes, you can peel them or not. Wash the green onions, celery and radishes. Slice the green onions stalks as far up as you want to go. You may have to peel an outside layer. Trim off both ends of the celery. Slice those up in relatively thick slices. Cut the radishes in as big of chucks as you like, I usually slice them, stack the slices and quarter them. Peel the cucumber. You can remove the seeds if you wish, if does keep the potato salad from getting runny the next day. Cube the cucumber. Toss all the vegetables in a bowl and stir gently to mix them up. If you want more of anything go ahead and add it. Add the garlic salt, pepper, dill and thyme and stir. The spices will be according to your taste. We like dill so I add a lot of dill. Add one or two large spoonfuls of mayonnaise. Stir some more, if you want to add more mayo go ahead but at some point taste it to see want it needs. Chill for at least an hour before serving.

This is truly a dump and pour recipe. I don't have any measurements, I add by sight. It started as my mom's recipe and I have add little touches here and there.
