1 package of roasted garlic and olive oil couscous
2 c. shredded cooked chicken, roasted
5 c. baby spinach
1/4 c. chopped walnuts
1/4 c. fresh basil

Directions:
1. Make couscous per instructions (omit salt and/or oil if you want it to be low fat). Be sure to whisk flavor packet in with water to reduce lumps.

2. Spray skillet with cooking spray (Pam), add walnuts and toast for 2 min (or to your liking). Set aside walnuts.

3. Wash out skillet and respray with cooking spray (Pam), add chicken and spinach. Cook for 2 min (or until spinach is wilted)

4. Re-fluff couscous and add chicken, spinach, and walnuts

5. Chop up basil and add to mixture.

Serve immediately.

You can use canned chicken or I like to cook up a chicken breast and a half with some chicken seasoning and tomatoes (to help get them tender). Then I shred the chicken myself and measure out two cups (which is about a breast and a half).

It's very fast to make (if the chicken has already been cooked or you use canned) and it produces about 5 servings (1 1/4 c. per serving).
